Honey Lime Chicken Enchiladas
This is YUMMY! I got it from Cole - it's one of his friend's secret family recipes!
6 TBS honey
5 TBS lime juice (1 large lime)
1 TBS chili powder
1/2 tsp garlic powder
1 lb chicken, cooked and shredded
8-10 flour tortillas
1 lb monterey jack cheese, shredded
1 lb Hatch's green enchilada sauce
1/2 cup Heavy cream
Mix the first 4 ingredients and toss with shredded chicken. Let it marinate for at least 1/2 hour. Pour about 1/2 cup enchilada sauce on the bottom of a 9 x 13 baking pan. Fill flour tortillas with the chicken and cheese, saving about 1 cup of cheese to sprinkle on top of the enchiladas. Mix the remaining enchilada sauce with the cream and leftover marinade. Pour sauce on top of the enchiladas and sprinkle with cheese. Bake at 350 for 30 minutes or until brown and crispy on top. Enjoy!
P. S. If you don't have time to cook them in the oven, just whip up the chicken marinade and fill your tortillas then top with the enchilada sauce and cream mixture and cheese - It's still pretty great!

Mom's Fresh Salsa
This is super easy and very delicious!
1 lb. can diced tomatoes
1 tsp. lemon pepper
dash garlic salt
1/4 onion finely chopped
1/4 bunch cilantro finely chopped
Blend together in blender but KEEP IT CHUNKY, you are really just mixing it and chopping up the cilantro and onion a little more
Add 1 can of tomatoes with green chiles
Stir
Add fresh lime juice to taste (last time I added 3/4 of a lime)
ENJOY!

Vanilla wafers
2 - 8 ounce packages of cream cheese softened
2 eggs
3/4 c. sugar
1 tsp. lemon extract or vanilla
Place a vanilla wafer in the bottom of each foil liner. Mix the rest of the ingredients together and spread it on top of the wafer. Bake at 350 for 10-12 minutes.
